Serving Love

The month of December fills with spirited activities of preparation and celebration. At this phase of life for our family, meals tend to occur in shifts. To provide a delicious hot meal can present a challenge. Tonight, I plan to tackle that challenge with the help of my crock pot.

Taco Ring/Homemade Hot Pocket is a family favorite meal. It consists of taco meat – we usually use browned burger seasoned with taco flavoring (but you can swap in chicken, turkey, or pork), cheese, and crescent rolls. Once the meat has been browned and seasoned, I add in 1 cup of shredded cheese along with 2 tablespoons of water for every pound of meat. While the meat is browning, I open 2 cans of crescent rolls.

Putting It Together

If the hot pockets have been requested, I leave the rectangles of together and press/pinch the dotted seams together to seal them. This yields 4 homemade hot pockets once filled and topped with another dough rectangle.

For the ring, all the triangles are separated and arranged in an overlapping circle with the right angle and short ends (the longer pointed end lays away from the center of the circle). Press the overlap together to seal the base. Then spoon the meat & cheese mixture onto the base section. Take the long pointed section and wrap it over the meat, tucking the tip under the dough on the opposite side to seal while baking. The ring yields 8 servings. These bakes at 375 degrees for 20-25 minutes.

So tonight I will use my crock pot to keep the meat warm and each shift of dinner, 4 pm & 8:30 pm, will enjoy a warm bread filled with delicious meat from the oven. Using the tools available, I meet the needs of hunger in our home with a hot meal and a healthy dose of love.

Sweet Tradition

What a delicious couple of days! Thanks to my sister we enjoy a tradition of eating homemade pumpkin roll. One of my sons wanted to make sure it was not left off the menu this year and joined me in the kitchen. Together we made a double batch of pumpkin roll to have one to share and one to enjoy in our home. Look to the end of this post for the recipe. Our efforts were sister approved and thoroughly enjoyed by many. However, as I write this I do believe the final piece is being consumed…

Just as we kept with tradition of creating something sweet to enjoy in our stomachs, we also shared words of gratitude for the gifts in our lives. These words acknowledged the goodness in our lives and doing so brought sweetness to our bodies, minds, and souls. Proverbs shares this point.

If you would like to make pumpkin roll in your home, here is the recipe as shared by my sister.

Pumpkin Roll Ingredients:

3 eggs

1 cup sugar

1 tsp baking soda

2/3 cup pumpkin

3/4 cup flour

2 tsp cinnamon

Directions:

Mix together and bake at 350 degrees in a greased and floured jellyroll pan for 12-15 minutes. Loosen edges with a knife. Turn out onto a dish towel sprinkled with powdered sugar. Roll up in towel. Leave rolled for 30 minutes. Mix the icing ingredients* together and spread on unrolled cake, then reroll. Chill.

*Icing Ingredients: 1 (8 oz.) package of cream cheese, 4 Tablespoons butter, 1 cup powdered sugar (10X sugar), 1 teaspoon vanilla

I foresee the pumpkin roll being made again in the near future for our family and others to enjoy (maybe even as some Christmas gifts??). And we will definitely share pleasant words along with it. May you and your loved ones feast on both pleasant words and sweet treats!

Listening

As we engage with others over the coming weeks, may you offer those in your presence with whom you have healthy boundaries the gift of your listening with attention to them. Open the floor for their voice to be heard. This means truly absorbing their words and thoughts. Only once they have completed them do you respond.

Take Pleasure In All Their Toil

Wow! What a weekend here at Gravel Hill. On Saturday our spaces were filled. Treats, goodies, and people filled Gravel Hill as shopping commenced. Glad hearts and good spirits filled the air. Initial counts from the Christmas Market shared on Sunday came to $9,267. This money will go towards support four local charities.

The spirit of joy continued in the morning. The family of God grew. Several baptisms occurred welcoming new members to the body of believers. So excited for our new brothers and sisters in Christ!

As we round the corner towards Thanksgiving week, preparations have begun. The day of gathering, feasting, and fellowshipping may be large, noisy, and boisterous or small, quiet, and contemplative. Each scenario affords opportunity to create wonderful memories.

While there is plenty of toil between this past weekend and in preparation for Thanksgiving, keep doing so. In such, you live the scriptures. You are gifted by God with the ability to get to do exactly what it is that you do! Celebrate that fact.

As you celebrate this Thanksgiving, you may want to add this delightful dish to your table: Deb’s Kale Salad with Apple, Cranberries, and Pecans. It was on our table last year and was a nice lighter, brighter (& delicious!) dish that complimented all the other foods.

Community and Giving

5 more sleeps! When we awake after our fifth sleep, the Christmas Market at Gravel Hill will greet us. From 7 am to 2 pm a variety of delights will awaits those walking through the doors. Beautiful handcrafted items, delicious treats from both the Baked Shoppe and the Candy Shoppe, and a wide selection of products available through the various vendors will all be on hand to help you with your Christmas shopping list. Highly anticipated (& excited to be in person again this year!), this annual event helps bring in the holiday season and kick the spirit of goodwill into full gear.

Not only do the attendees get to experience the excitement and joy of preparing for their future gatherings through some shopping, but they also help local charities in the process. Four local charities receive money from the funds raised throughout the day to help their programming. The totals are announced the day after Christmas Market during worship at 8 am, 9:15 am, and 10:30 am on our Harvest Home Sunday – You are welcome to join us in worship!

Bounty and blessings overflow on this weekend of goodness.  You can come be part of it all! As the saying goes, “The more the merrier!” When we season our days with community and giving, our emotional buckets brim with with delight.

Welcome to a new venture coming from Gravel Hill: Monday’s Menu. Inside this feature each Monday you will find a variety of forms of fuel for you. As you begin your week, the hope is to provide things you can try and enjoy!

To begin, I’ll share a basic recipe for pizza dough. I use this recipe here in our home every Friday (with all my boys – I do make a double batch for our family to enjoy). Oregano does get thrown in at the end of the mixing of the dough for us and you can add any herbs that you prefer to make it your own too!

PIZZA DOUGH

2/3 c. warm water

1 pkg. yeast

1 tsp. salt

4 T oil

1 1/2 c. flour

Mix together in order of appearance. Top with sauce, cheese and toppings of your choice. Bake on cookie sheet at 425 degrees for 10 minutes.
