Sweet Tradition

What a delicious couple of days! Thanks to my sister we enjoy a tradition of eating homemade pumpkin roll. One of my sons wanted to make sure it was not left off the menu this year and joined me in the kitchen. Together we made a double batch of pumpkin roll to have one to share and one to enjoy in our home. Look to the end of this post for the recipe. Our efforts were sister approved and thoroughly enjoyed by many. However, as I write this I do believe the final piece is being consumed…

Just as we kept with tradition of creating something sweet to enjoy in our stomachs, we also shared words of gratitude for the gifts in our lives. These words acknowledged the goodness in our lives and doing so brought sweetness to our bodies, minds, and souls. Proverbs shares this point.

If you would like to make pumpkin roll in your home, here is the recipe as shared by my sister.

Pumpkin Roll Ingredients:

3 eggs

1 cup sugar

1 tsp baking soda

2/3 cup pumpkin

3/4 cup flour

2 tsp cinnamon

Directions:

Mix together and bake at 350 degrees in a greased and floured jellyroll pan for 12-15 minutes. Loosen edges with a knife. Turn out onto a dish towel sprinkled with powdered sugar. Roll up in towel. Leave rolled for 30 minutes. Mix the icing ingredients* together and spread on unrolled cake, then reroll. Chill.

*Icing Ingredients: 1 (8 oz.) package of cream cheese, 4 Tablespoons butter, 1 cup powdered sugar (10X sugar), 1 teaspoon vanilla

I foresee the pumpkin roll being made again in the near future for our family and others to enjoy (maybe even as some Christmas gifts??). And we will definitely share pleasant words along with it. May you and your loved ones feast on both pleasant words and sweet treats!
